*To make the pancake mix powder from scratch, 부침가루 없이 밀가루로 부침가루 만드는 법*

Instead of using 2 cups of Korean sold pancake mix powder, you need (부침가루 2컵 사용대신)

1 ½ cup of all purpose white flour, (1 ½ 컵 중력분)

½ cup of corn flour, (½ 컵 감자 혹은 옥수수 전분)

¼ tsp Baking powder (¼ 티스푼 베이킹 파우더)

1-2 eggs (depends on the size of the egg), (크기에 따라 1-2 계란)

½ tsp of Mat So Geum (Korean flavouring salt) OR just normal table salt (½ 티스푼 맛소금)

Pinch of pepper powder, (후추 약간)

Reduce liquid by ⅓ cup. Instead of 2 cups of liquid, use a total of 1 ⅔ cup of liquid.

(EX:1 ⅓ cold water, ⅓ Kimchi Juice) (물양은 ⅓ 컵 줄여주세요. 예: 1 ⅓ 컵 냉수, ⅓ 컵 김칫물)

*The secret to make Kimchi pancake/ Kimchi Jeon successfully*

1/ Use well aged/ripe cabbage Kimchi

2/ Pan fry at medium heat

3/ Use generous amount of cooking oil

4/ Pat dry any additional items you add to classic Kimchi pancake batter. If they are wet, the pancake becomes soggy

*Ingredients for the classic version of Kimchi pancake*

¼ whole cabbage Kimchi

2 Cups Korean pancake mix powder (Bu Chim Ga Roo)

1 ¾ Cups cold water

¼ Cup Kimchi juice

1 TBS Korean chilli powder (Optional)

1 TBS Minced garlic (Optional)

TBS = Tablespoon, tsp = TeaSpoon, 1 Cup = 250ml
